Jenny Grimm, Cindy Haley and Pat Lassiter of Houston had lunch May 6 at the Chinese restaurant in Mountain Grove. Afterwards they went to paint pottery at Your Art’s Desire.
The Abundance Quartet, which includes Ed Edington of Houston, performed April 29 at the Killebrew Theatre in Leslie, Ark.; and Sunday morning, April 30, at First Baptist Church in Heber Springs, Ark., and also that evening at Antioch Freewill Baptist Church in Russellville, Ark. Edington returned home May 1. The Abundance Quartet was formed in July of 2013. The founding members are David Hartwell, Alan Pohlmeier, Ed Edington and Jamie Layton. These men have come together with the purpose of sharing the Gospel of Jesus Christ through song.

RECIPE OF THE WEEK
Do Nothing Cake
Cake:
• 2 cups all-purpose flour
• 2 cups granulated sugar
• 2 eggs, slightly beaten
• 1 tsp vanilla
• 1 tsp baking soda
• Pinch of salt
• 1 large can 20-ounce crushed pineapple with juice
Frosting:
• 1 stick (1/2 cup) butter
• 1 cup sugar
• 1 can 5 1/2-oz evaporated milk
• 1 cup chopped pecans
• 1 cup shredded coconut
1. Preheat oven to 350°F.
2. In a large bowl, whisk together all the batter ingredients until just combined.
3. Pour into a greased 13×9 baking dish, and bake for 30-40 minutes or until a wooden toothpick, inserted in the middle comes out clean. Don’t over bake.
4. While cake is still baking, prepare the frosting.
5. Heat the butter, sugar, and evaporated milk in a small saucepan until boiling.
6. Cook and stir for about five minutes or until slightly thickened.
7. Remove from heat and add in the coconut and pecans.
8. Remove the cake from oven, and using a kabob skewer or wooden spoon handle, or some similar-sized object, poke holes in the cake. (You need holes so that hot frosting has plenty of room to get down and soak the cake.)
9. Pour frosting over the hot cake, spreading it out to make sure it’s all evenly dispersed.
10. Allow cake to cool for a bit before cutting.
