Josephine Williamson of Houston and her friend, Dianna LaChance, of Derry, N.H., took an 11-day tour to Scotland and Ireland with Sunny Land Tours out of Springfield. Highlights of the trip included: A cruise on the Loch Ness and looking for “Nessie,” a trip to Belfast where the famous Titanic was built, visiting the Blarney Castle and “kissing the Blarney Stone” and visiting the Cliffs of Moher, a spectacular wall of sandstone that reaches 700 feet above the Atlantic Ocean. They also visited several castles and Dublin’s Trinity College. Their final night in Ireland consisted of a memorable medievalstyle feast at Bunratty Castle.

Cheesy Slow-Cooker
Tater Tot Casserole
Ingredients:
• 20 to 30 frozen meatballs
• 1 can cream of chicken soup
• 2 cups frozen green beans
• 3 cups frozen tater tots
• 1 1/2 cups shredded cheddar cheese
Directions:
1. Pour frozen meatballs, soup and green beans into the bottom of a 4 to 6 quart slow cooker. Stir. Top with tater tots. Place cover on slow cooker and cook on high for four hours or on low for five hours.
2. Sprinkle cheese on top, cover and cook one hour more.
