RECIPE OF THE WEEK

Orange Cranberry Cake

Ingredients:

• 1 cup sour cream

• 2 cups sugar

• 1 cup butter, softened

• 1 tbsp. grated orange peel

• 4 large eggs

• 3 1/4 cups all purpose flour

• 2 tsp. baking powder

• 1/2 tsp. salt

• 1/4 tsp. ground nutmeg

• 1 1/3 cups cranberries, chopped

Directions:

1. Heat oven to 350°. Coat a 12-cup bundt pan with non-stick cooking spray with flour.

2. Whisk together flour, baking powder, salt and nutmeg.

Beat sugar, butter and orange peel until light and fluffy. (About three minutes)

3. Add one egg at a time beating at low speed until well blended. Beat in flour mixture in three parts alternating with sour cream.

4. Stir in cranberries. Pour batter into pan and bake 65-70 minutes.

Let cool for 15 minutes then invert onto a wire rack to cool completely.
